Chocolate Covered Peanut Butter Crackers

Doesn’t the title just make you want to drool with anticipation?! I can’t think of any better combination than chocolate and peanut butter! And this recipe, if you can even call it that, is SO simple! It’s one that my kids of all ages can participate in and can’t *really* mess it up.
Four ingredients. No baking. All deliciousness.
I don’t cheap out on the crackers and peanut butter on this one. The off-brand crackers tend to crack and crumble more than Ritz and the consistency of Jif peanut butter is the perfect ratio of thickness and creaminess. I always buy the least expensive chocolate bark and use Crisco to get it to the perfect consistency to dunk the crackers in without all the chocolate sliding right off before it hardens.
Directions are pretty self explanatory. Make stacks upon stacks of peanut butter cracker sandwiches. Lay out wax paper for easy clean-up. Heat chocolate bark in microwave with small amount of Crisco according to directions on package. Immediately begin dunking cracker sandwiches in chocolate and laying on wax paper to harden.
I have these handy tools that I picked up a home chocolate party (yes, that’s a thing!)to retrieve the crackers from the bowl of chocolate. I believe they are used for fondue, but that’s just way too fancy for my lifestyle so this is what I use them for. If you don’t have something similar to this, a regular fork will work just fine, you will just have to clean it off a little more frequently as the chocolate with harden between the prongs.
Once placed on the wax paper, if you want them to look extra fancy, go ahead and lightly apply sprinkles. Or you know…if your kids are helping, might as well go heavy on the sprinkles on just ONE cracker. Whatever….
Once done, store in an airtight container or Ziploc bag. Mine stay good for a couple of weeks in my cold garage…not sure how much longer than that though because they end up gone by then. YUM, YUM, YUM!
